The Starchy Study

We are interested in understanding the impacts of starch on health, with a primary focus on sleep and nocturnal glucose. To invesitgate this, we have set up a 14-week dietary intervention, where you will consume 1 portion of starch in your evening meal, every evening, whilst you wear some state-of-the-art equipment.
Requirements
- Age 40-80
- Non-smokers
- No health conditions
- Sub-optimal sleep quality (sleep efficiency <85%)
- No sleep-related disorder
- Consume 4 or less fruits and veg/ per day
- Non- vegan
- BMI between 18.5-40
- Regularly consumes white starches (white rice, white pasta)
- No medications which may interfere with sleep or glucose metabolism
- Willing to stop any supplements

The study has been granted a favourable opinion by the Health Faculties Research Ethics Committee at Kings College London on the 28th April 2023 (RESCM-22/23-35587).
About the researcher
I am a registered nutritionist, with a BSc Hons in Biological Sciences and an MSc in Nutrition. I am running this study in fulfillment of my PhD thesis.
